Order \u8089\u4e38\u80e1\u8fa3\u6c64, a thick peppery soup with beef balls, about \u00a58, with \u5768\u5768\u998d to tear in. Or find a cart selling \u7511\u7cd5, sticky rice steamed with red dates, about \u00a55 a portion; it&#8217;s the local equivalent of a danish and just as addictive.<\/p>\n<p><strong>Midday.<\/strong> Biangbiang noodles \u2014 the wide ribbons slapped onto the counter with a sound like applause. Order \u4e09\u5408\u4e00 (about \u00a520), the version with three toppings, and watch the cook work before you eat. A pork-intestine relative of yangroupaomo, and the dish locals argue about most.<\/li>\n<li><strong>\u67ff\u5b50\u997c (persimmon cakes)<\/strong> \u2014 about \u00a54 each, fried, sticky-sweet, best when they&#8217;re still hot.<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"Day_2_%E2%80%94_Yongxingfang_Dumplings_and_a_Cooking_Class\"><\/span>Day 2 \u2014 Yongxingfang, Dumplings, and a Cooking Class<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Morning.<\/strong> Take Line 4 to \u5927\u5dee\u5e02 and walk to \u6c38\u5174\u574a, a walled food park by Zhongshan Gate that gathers Shaanxi&#8217;s regional snacks into one tidy circuit. The famous \u6454\u7897\u9152 is here \u2014 a tiny cup of rice wine you smash after drinking (about \u00a55 a cup, enormous fun and strictly a spectator sport if you&#8217;re driving). \u5b50\u957f\u714e\u997c and \u51c9\u76ae stalls fill the lanes; come before noon and it&#8217;s pleasantly calm.<\/p>\n<p><strong>Midday.<\/strong> The dumpling banquet at \u5fb7\u53d1\u957f, near the Bell Tower, is theatre as much as lunch: dozens of dumplings shaped like flowers, frogs, even miniature terracotta warriors. Sets start around \u00a580\u2013150 per person; book ahead on weekends.<\/p>\n<p><strong>Afternoon.<\/strong> A cooking class. Studios near Big Wild Goose Pagoda run two-hour sessions where you make biangbiang noodles or dumplings and then eat your results \u2014 about \u00a5150\u2013200 per person. It&#8217;s the souvenir that fits in a suitcase, and the technique for slapping dough is easier than it looks.<\/p>\n<p><strong>Night.<\/strong> Finish the trip the proper way: \u7f8a\u8089\u6ce1\u998d, torn by hand, at a quiet \u6ce1\u998d shop on \u5927\u76ae\u9662. The \u540c\u76db\u7965 flagship near the Drum Tower is the famous version \u2014 about \u00a535\u201340 \u2014 but any busy small shop with old men inside is a safe bet. The spreadsheet died by lunchtime on day one. I let it.
